Crispy Jalapeño Poppers
Ingredients:
10 fresh jalapeños (medium-large)
8 oz cream cheese (softened)
1 cup shredded cheddar cheese (or pepper jack)
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
12 slices of bacon (optional, chopped and cooked until crispy)
1 cup all-purpose flour
2 eggs (beaten)
1 1/2 cups seasoned breadcrumbs or panko for extra crunch
Oil for frying (or air fryer/oven instructions below)

Instructions:
1. Prep Jalapeños
Cut jalapeños in half lengthwise and scoop out the seeds and membranes (wear gloves!).
2. Make Filling
In a bowl, mix cream cheese, shredded cheese, garlic powder, onion powder, salt, pepper, and bacon (if using).
3. Stuff Jalapeños
Fill each jalapeño half with the cream cheese mixture. Press lightly to ensure it sticks well.
4. Bread Them
Dredge each stuffed jalapeño in flour.
Dip in beaten eggs.
Roll in breadcrumbs or panko until well coated. (For extra crispiness, repeat egg + breadcrumb step.)
5. Fry or Bake/Air Fry:
Deep Fry: Heat oil to 350°F (175°C). Fry for 2–3 minutes until golden brown. Drain on paper towels.
Air Fryer: Spray poppers with oil. Air fry at 375°F for 8–10 minutes until crispy.
Oven: Place on a baking sheet, spray with oil, bake at 400°F for 18–20 minutes.
