Cheesy Beef Noodle




Cheesy Beef Noodle Bake 

Ingredients:

  • 12 oz egg noodles, cooked and drained
  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 oz) can tomato sauce
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 1 cup sour cream
  • 1 cup cottage cheese or ricotta cheese
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tbsp butter

Instructions:

  1. Preheat Oven: Set to 350°F (175°C). Grease a 9x13-inch baking dish.
  2. Cook Beef Mixture:
    • In a large skillet, cook ground beef and onion over medium heat until browned.
    • Add garlic and cook for 30 seconds.
    • Stir in tomato sauce, diced tomatoes, Italian seasoning, salt, pepper, and red pepper flakes. Simmer for 5 minutes.
  3. Mix Dairy Layer:
    • In a bowl, combine sour cream and cottage cheese. Set aside.
  4. Layer the Casserole:
    • Toss cooked noodles with butter and place half in the baking dish.
    • Spread half of the sour cream mixture over the noodles.
    • Add half of the beef mixture, then sprinkle 1 cup cheddar cheese.
    • Repeat layers, finishing with shredded mozzarella on top.
  5. Bake:
    • Cover with foil and bake for 20 minutes.
    • Remove foil and bake for another 10 minutes or until cheese is melted and bubbly.
  6. Serve: Let sit for 5 minutes before serving. Enjoy!
