Cheesy Beef Noodle Bake
Ingredients:
- 12 oz egg noodles, cooked and drained
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 (15 oz) can tomato sauce
- 1 (14.5 oz) can diced tomatoes, drained
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp red pepper flakes (optional)
- 1 cup sour cream
- 1 cup cottage cheese or ricotta cheese
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 2 tbsp butter
Instructions:
- Preheat Oven: Set to 350°F (175°C). Grease a 9x13-inch baking dish.
- Cook Beef Mixture:
- In a large skillet, cook ground beef and onion over medium heat until browned.
- Add garlic and cook for 30 seconds.
- Stir in tomato sauce, diced tomatoes, Italian seasoning, salt, pepper, and red pepper flakes. Simmer for 5 minutes.
- Mix Dairy Layer:
- In a bowl, combine sour cream and cottage cheese. Set aside.
- Layer the Casserole:
- Toss cooked noodles with butter and place half in the baking dish.
- Spread half of the sour cream mixture over the noodles.
- Add half of the beef mixture, then sprinkle 1 cup cheddar cheese.
- Repeat layers, finishing with shredded mozzarella on top.
- Bake:
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for another 10 minutes or until cheese is melted and bubbly.
- Serve: Let sit for 5 minutes before serving. Enjoy!
