Cheesy Ground Beef Rice Casserole
Ingredients:
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 cup uncooked white rice
2 cups beef broth (or water + bouillon)
1 can (10.5 oz) cream of mushroom soup (or cream of chicken)
1 can (10 oz) Rotel (diced tomatoes with green chilies) – optional for a kick
1½ cups shredded cheddar cheese (divided)
1 tsp paprika
1 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley or green onions (optional garnish)
Instructions:
1. Preheat oven to 350°F (175°C).
2. In a large skillet, cook ground beef with diced onion until browned. Drain excess grease.
3. Stir in garlic, paprika, Italian seasoning, and salt/pepper. Cook for 1 minute.
4. In a large bowl, combine beef mixture, uncooked rice, beef broth, soup, Rotel (if using), and 1 cup shredded cheese.
5. Pour into a greased 9x13 casserole dish and cover tightly with foil.
6. Bake for 50–60 minutes, or until rice is tender and liquid is absorbed.
7. Remove foil, sprinkle with remaining ½ cup cheese, and bake uncovered for 5–10 more minutes until cheese is melted.
8. Let sit for 5–10 minutes before serving. Garnish if desired.
