Garlic Parmesan Chicken Mini Meatloaf
Ingredients:
1 lb ground chicken
1/2 cup breadcrumbs (Italian or plain)
1/3 cup grated Parmesan cheese
1/4 cup milk
1 egg
2 cloves garlic, minced
1 tsp onion powder
1/2 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1/2 cup shredded mozzarella (optional, for melty center or topping)
Fresh parsley, chopped (for garnish)
Topping (optional but tasty):
2 tbsp butter, melted
1 clove garlic, minced
2 tbsp grated Parmesan
1 tbsp chopped parsley

Instructions:
1. Preheat oven to 375°F (190°C). Spray a muffin tin with nonstick spray.
2. In a large bowl, mix together the ground chicken, breadcrumbs, Parmesan, milk, egg, garlic, onion powder, Italian seasoning, salt, and pepper. Don’t overmix.
3. Scoop the mixture evenly into 8-10 muffin cups. If using mozzarella, push a little into the center of each one.
4. Bake for 20–25 minutes or until internal temperature reaches 165°F.
5. Optional topping: Mix melted butter, garlic, Parmesan, and parsley. Brush over the hot mini meatloaves when they come out of the oven.
6. Garnish with extra parsley and serve!
