Classic Meatloaf with Roasted Potatoes
The ultimate comfort food combo—juicy meatloaf and crispy, seasoned potatoes baked to perfection!
Ingredients:
For the Meatloaf:
1 1/2 lbs ground beef (80/20 is ideal)
1/2 cup breadcrumbs
1/4 cup milk
1 egg
1/4 cup finely chopped onion
2 cloves garlic, minced
2 tbsp ketchup
1 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
Topping:
1/4 cup ketchup
1 tbsp brown sugar
1 tsp mustard
For the Roasted Potatoes:
1 1/2 lbs baby potatoes, halved
2 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
Salt and pepper to taste
Fresh parsley for garnish
Instructions:
1. Preheat oven to 375°F (190°C). Line a baking sheet with foil or parchment.
2. In a large bowl, mix together the ground beef, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire, salt, and pepper until just combined.
3. Shape into a loaf and place on one side of the baking sheet (or in a loaf pan).
4. Mix the topping ingredients and spread over the top of the meatloaf.
5. In a separate bowl, toss potatoes with olive oil, garlic powder, smoked paprika, salt, and pepper. Spread out on the other side of the pan (or use another pan).
6. Bake for 45–55 minutes, or until meatloaf reaches 160°F and potatoes are golden and tender.
7. Let meatloaf rest 5–10 minutes before slicing. Garnish with fresh parsley.
8. Serve and enjoy every bite!
