Old Fashioned Potato Salad
Ingredients:
2 ½ lbs russet or Yukon gold potatoes (about 6 medium)
1 ¼ cups mayonnaise
2 tbsp yellow mustard
1 tbsp apple cider vinegar
1 tsp sugar
½ tsp salt (or to taste)
½ tsp black pepper
3 hard-boiled eggs (chopped)
½ cup celery (finely chopped)
¼ cup red onion or sweet onion (finely chopped)
2 tbsp sweet pickle relish (optional)
Paprika (for garnish)

Instructions:
1. Boil the Potatoes
Peel and cut potatoes into bite-sized chunks. Boil in salted water until fork-tender (about 10–12 minutes). Drain and let cool.
2. Make the Dressing
In a large bowl, whisk together mayonnaise, mustard, vinegar, sugar, salt, and pepper.
3. Combine Everything
Gently fold the cooled potatoes, chopped eggs, celery, onion, and relish into the dressing. Mix until coated but don’t mash the potatoes.
4. Chill
Cover and refrigerate for at least 1 hour (even better overnight) to let the flavors meld.
5. Serve
Sprinkle with paprika just before serving for that nostalgic look.
