🍫 Peanut Butter Lunch Lady Bars
Ingredients:
For the bars:
1 cup unsalted butter, melted
1 cup creamy peanut butter
2 cups granulated sugar
1 cup packed brown sugar
4 large eggs
2 tsp vanilla extract
2 cups all-purpose flour
2 cups old-fashioned oats
2 tsp baking soda
1/2 tsp salt
For the frosting:
1/2 cup unsalted butter, softened
1/2 cup creamy peanut butter
1/4 cup milk (more if needed)
2 tsp vanilla extract
3–4 cups powdered sugar

Instructions:
1. Preheat oven to 350°F (175°C). Grease a 13×18-inch sheet pan (or two 9×13 pans).
2. Make the bar batter:
In a large bowl, mix melted butter and peanut butter until smooth.
Add sugars, eggs, and vanilla; beat until combined.
Stir in flour, oats, baking soda, and salt. Mix just until incorporated.
3. Bake:
Spread batter evenly in prepared pan.
Bake for 18–22 minutes, or until golden brown and set. Do not overbake.
Let bars cool slightly while you prepare frosting.
4. Make frosting:
Beat butter and peanut butter until creamy.
Add milk, vanilla, and powdered sugar gradually until smooth and spreadable.
Adjust with a little more milk or powdered sugar if needed.
5. Frost bars:
Spread frosting evenly over warm (not hot) bars for a melt-in effect.
Allow to cool completely before cutting into squares.
