Easy Taco Salad
Ingredients:
For the Meat:
1 lb ground beef (or ground turkey)
1 packet taco seasoning
1/2 cup water
For the Salad Base:
6 cups chopped romaine lettuce (or iceberg)
1 cup cherry tomatoes, halved
1 cup canned black beans, drained and rinsed
1 cup corn (frozen or canned)
1/2 cup red onion, diced
1 cup shredded cheddar or Mexican blend cheese
1 avocado, diced
1 cup crushed tortilla chips (or whole chips for dipping)
Optional Toppings:
Sour cream or plain Greek yogurt
Salsa or pico de gallo
Jalapeños
Lime wedges
Cilantro

Instructions:
1. Cook the Meat:
In a skillet over medium heat, cook the ground beef until browned.
Drain grease, then stir in taco seasoning and water. Simmer for 5 minutes until thickened. Remove from heat and let cool slightly.
2. Assemble the Salad:
In a large bowl or on a platter, layer the lettuce, tomatoes, beans, corn, onions, and cheese.
3. Add the meat:
Spoon the taco-seasoned beef on top of the salad base.
4. Top it off:
Add avocado, crushed tortilla chips, and any desired extras like sour cream or salsa.
5. Serve:
Toss everything together or serve it layered. Squeeze some lime over the top for a fresh pop!
