Mac and Cheese Stuffed Meatloaf
Ingredients:
For the Mac and Cheese:
1½ cups elbow macaroni, cooked and drained
1 tbsp butter
1 cup shredded sharp cheddar cheese
¼ cup milk
Salt and pepper to taste
For the Meatloaf:
2 lbs ground beef
1 cup breadcrumbs
1 small onion, finely chopped
2 eggs
¼ cup milk
1 tbsp Worcestershire sauce
1 tsp garlic powder
Salt and pepper to taste
½ cup ketchup (for topping)

Instructions:
1. Make the Mac & Cheese:
While the pasta is still hot, stir in butter, cheese, and milk. Mix until creamy. Season with salt and pepper. Let it cool slightly so it's easier to handle.
2. Prepare the Meatloaf Mixture:
In a large bowl, mix ground beef, breadcrumbs, onion, eggs, milk, Worcestershire sauce, garlic powder, salt, and pepper until fully combined.
3. Form the Loaf:
On a lined baking sheet or in a loaf pan, shape about ⅔ of the meat mixture into a loaf shape, creating a hollow center (like a boat). Fill with mac and cheese, then cover and seal with remaining meat mixture.
4. Top & Bake:
Spread ketchup on top. Bake at 375°F for 50–60 minutes, or until the internal temp reaches 160°F. Let rest 10 minutes before slicing.
