Sweet Amish Macaroni Salad
Ingredients:
2 cups uncooked elbow macaroni
3 large eggs, hard-boiled and chopped
1 cup mayonnaise
1/4 cup granulated sugar
2 tablespoons yellow mustard
2 tablespoons apple cider vinegar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup finely diced celery
1/2 cup finely diced red bell pepper (or green)
1/4 cup finely diced onion (sweet or red onion)
Optional: paprika for garnish

Instructions:
1. Cook macaroni: Boil the elbow macaroni in salted water according to package directions until al dente. Drain, rinse under cold water, and set aside to cool.
2. Make the dressing: In a large bowl, whisk together mayonnaise, sugar, mustard, vinegar, salt, and pepper until smooth.
3. Add the mix-ins: Stir in the chopped eggs, celery, bell pepper, and onion.
4. Combine: Add the cooled macaroni to the bowl and mix everything until well coated.
5. Chill: Cover and refrigerate for at least 2 hours (or overnight) to let the flavors meld.
6. Serve: Stir before serving and sprinkle with paprika for a classic touch.
