🌴 Coconut Lime Fish Soup Ingredients: 1 lb white fish fillets (cod, halibut, or tilapia), cut into chunks 1 tbsp olive oil 1 small onion, diced 2 garlic cloves, minced 1 tbsp fresh ginger, minced 1 tbsp red curry paste 4 cups chicken or vegetable broth 1 (14 oz) can coconut milk 1 red bell pepper, thinly sliced 1 medium carrot, julienned or thinly sliced 2 tbsp fish sauce (or soy sauce) 2 tbsp lime juice (plus wedges for serving) 1 tsp brown sugar (optional, to balance flavors) Salt and pepper, to taste Fresh cilantro, for garnish Cooked rice or rice noodles (optional, for serving)
--- Instructions: 1. Sauté aromatics Heat olive oil in a large pot over medium heat. Add onion, garlic, and ginger. Cook until softened and fragrant, about 2–3 minutes.
2. Add curry paste Stir in the red curry paste and cook for another minute to release its flavors.
3. Build the broth Pour in the chicken/vegetable broth and bring to a simmer. Stir in the coconut milk until well combined.
4. Add vegetables Add the bell pepper and carrot. Let simmer for 5–7 minutes until slightly tender.
5. Season and balance Stir in fish sauce, lime juice, and brown sugar (if using). Taste and adjust with salt and pepper.
6. Cook the fish Gently add the fish chunks to the simmering soup. Cook uncovered for 5–7 minutes, or until the fish is opaque and flakes easily.
7. Finish and serve Ladle into bowls and top with fresh cilantro. Serve as is, or with rice/rice noodles for a heartier meal. Add extra lime wedges on the side for brightness.
