Ingredients:
• 2 white fish fillets (like cod, tilapia, or haddock)
• 1 zucchini, sliced
• 1/2 cup cherry or grape tomatoes
• 1/2 cup mixed olives (green and Kalamata)
• 1/2 cup artichoke hearts, chopped (optional)
• 3–4 tablespoons olive oil
• 1 tablespoon lemon juice
• 2 garlic cloves, minced
• 1 teaspoon paprika
• 1/2 teaspoon crushed red pepper (optional)
• 1 teaspoon dried oregano or Italian herbs
• Salt and black pepper to taste
• Fresh parsley, chopped
Instructions:
1. Preheat Oven to 400°F (200°C).
2. Prepare the Marinade:
• In a small bowl, mix olive oil, lemon juice, garlic, paprika, herbs, salt, pepper, and red pepper flakes.
3. Assemble the Dish:
• Place the fish fillets in a baking dish.
• Surround them with zucchini slices, cherry tomatoes, olives, and chopped artichokes.
• Pour the marinade evenly over the fish and vegetables.
• Sprinkle fresh parsley on top.
