Air Fryer Chicken Fajitas
Ingredients:
1 lb (450g) boneless, skinless chicken breasts or thighs, sliced into thin strips
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced (optional)
1 small onion, sliced
1½ tablespoons olive oil
1 tablespoon fajita seasoning (store-bought or homemade*)
½ teaspoon garlic powder
½ teaspoon smoked paprika
½ teaspoon salt
½ teaspoon black pepper
Juice of 1 lime
8 small flour or corn tortillas
Optional Toppings:
Sour cream
Salsa
Guacamole
Shredded cheese
Fresh cilantro
Instructions:
1. Preheat the Air Fryer
Set your air fryer to 375°F (190°C) for 3 minutes.
2. Season the Chicken and Veggies
In a large bowl, mix the sliced chicken, bell peppers, and onion.
Drizzle with olive oil and lime juice.
Sprinkle fajita seasoning, garlic powder, smoked paprika, salt, and pepper. Toss to coat evenly.
3. Cook in the Air Fryer
Place the mixture in the air fryer basket in a single layer. (Cook in batches if needed.)
Air fry at 375°F (190°C) for 12-15 minutes, shaking the basket halfway through, until the chicken is fully cooked and slightly charred.
4. Warm the Tortillas
Wrap tortillas in foil and place them in the air fryer for 1-2 minutes.
5. Assemble and Serve
Fill each tortilla with the fajita mixture.
