Company Chicken Casserole
Ingredients:
- 3 cups cooked, shredded chicken
- 1 (10.5 oz) can cream of chicken soup
- 1 (8 oz) package cream cheese, softened
- 1 cup sour cream
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon black pepper
- 2 cups shredded cheddar cheese (divided: 1 ½ cups for mixing, ½ cup for topping)
- 1 sleeve Ritz crackers, crushed
- 4 tablespoons butter, melted
- 2 cups cooked rice or egg noodles (optional, for serving)
Instructions:
- Preheat oven to 350°F. Lightly grease a 9x13-inch baking dish.
- In a large bowl, mix cream cheese, sour cream, cream of chicken soup, garlic powder, onion powder, and black pepper until smooth.
- Stir in shredded chicken and 1 ½ cups of cheese, mixing well.
- Spread the mixture evenly into the baking dish.
- In a separate bowl, combine crushed Ritz crackers with melted butter, then sprinkle evenly over the casserole.
- Top with the remaining ½ cup of shredded cheese.
- Bake uncovered for 30-35 minutes, until hot and bubbly with a golden topping.
- Let sit for 5 minutes before serving. Serve over rice or egg noodles if desired.
Optional Additions:
- Stir in 1 cup of frozen peas or broccoli for extra veggies.
- Add 1/2 teaspoon paprika or a dash of hot sauce for extra flavor.
