Slow Cooker Street Corn Chicken.
Ingredients
4 boneless, skinless chicken breasts
1 can (15 oz) whole kernel corn, drained
1 can (15 oz) cream-style corn
1 cup shredded Mexican blend cheese
1/4 cup mayonnaise
1/4 cup sour cream
1 packet ranch seasoning mix
1 tsp chili powder
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp black pepper
Juice of 1 lime
2 tbsp chopped fresh cilantro (optional)
Crumbled cotija cheese (for garnish)
Directions
1. Place the chicken breasts at the bottom of your slow cooker.
2. In a medium bowl, combine the whole kernel corn, cream-style corn, shredded cheese, mayonnaise, sour cream, ranch seasoning mix, chili powder, garlic powder, smoked paprika, and black pepper. Mix until well combined.
3. Pour the corn mixture over the chicken breasts, covering them completely.
4. Cover and cook on low heat for 5-6 hours, or until the chicken is completely cooked and tender.
5. Once cooked, shred the chicken directly in the slow cooker using two forks and mix well with the corn sauce.
6. Squeeze the lime juice over the top and stir to combine.
7. If desired, sprinkle chopped cilantro and crumbled cotija cheese over the dish before serving.
