Irish stew
* 2 tablespoons olive oil
* 1 1/2 lb lean beef stew meat
* 1 teaspoon coarse salt
* 1 teaspoon ground black pepper
* 2 tablespoons flour
* 1 beef stock jelly
* Rosemary and Thyme.
* 4 large yukon golden potatoes or similar largely diced or new potatoes.
* 2 large carrots, peeled and diced into 1 inch pieces
* 2 large parsnips, peeled and diced into 1 inch pieces
* 1/2 large yellow onion, chopped
* 2 cloves garlic, minced
* 1 tablespoon tomato paste
* 4 cups beef broth soup or similar
* 11.2 fluid ounce bottle Guinness Extra Stout or a can of Guinness
* Coarse salt and ground black pepper to taste
Method.
Mix meat with seasoned flour with salt and pepper.
Put meat in a hot pan to brown meat with onion and stock jelly. Cook down for about 5 minutes until brown. Add Guinness and tomato paste and garlic. Season with herbs to taste.
Chop up veg and slight boil for 5 minutes just to ensure not soft.
Add soup to slow cooker/ crock pot. The put everything in the crock put and cook on low for 7+ hours check meat falls apart.
