Pot Roast over Mashed Potatoes! 🙌
Here’s what you need to whip up this comforting feast:
Ingredients
- 3-4 lbs beef chuck roast (That’s a hunk o’ meat!)
- Salt and pepper to taste (Get generous, my friend!)
- 2 tablespoons olive oil (For that sizzle action!)
- 1 large onion, chopped (Bring on the tears! 😂)
- 4 cloves garlic, minced (Because who doesn’t love garlic?)
- 4 carrots, chopped (For some color and crunch)
- 3-4 potatoes, peeled and cubed (Hello, mashed potato heaven!)
- 2 cups beef broth (Liquid gold!)
- 1 tablespoon Worcestershire sauce (Say that three times fast!)
- 2-3 sprigs fresh thyme or 1 teaspoon dried thyme (Fancy herbs, baby!)
Directions
1. Preheat your oven to 325°F (165°C). We want it nice and toasty in there! 🔥
2. Season that pot roast with salt and pepper like you mean it!
3. In a big ol’ oven-safe pot, heat up your olive oil over medium-high heat. Throw in the roast and let it sear until it’s brown on all sides. Take it out and let it chill while you get the good stuff going!
4. In the same pot, toss in the onion and garlic. Sauté until the onion gets all translucent and pretty.
5. Add in the carrots and potatoes – stir ‘em for a few minutes to get them happy!
6. Pour in that beef broth and Worcestershire sauce, scraping the bottom to get all the tasty bits!
7. Pop that pot roast back in, sprinkle on the thyme, and bring it to a gentle simmer – like we’re taking a cozy nap!
