Stuffed Pepper Casserole – A One-Pan Comfort Classic
This easy, one-pan casserole has all the flavors of stuffed peppers but without the extra prep! It’s hearty, comforting, and perfect for a weeknight dinner.
Ingredients:
1 lb ground beef (or ground turkey)
1 small onion, diced
1 red bell pepper, diced
1 green bell pepper, diced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, undrained
1 can (8 oz) tomato sauce
1 cup beef broth (or water)
1 tsp Italian seasoning
½ tsp salt (or to taste)
½ tsp black pepper
½ tsp paprika
1 cup uncooked white rice
1½ cups shredded cheddar or mozzarella cheese
Instructions:
1. Brown the Beef – In a large oven-safe skillet or Dutch oven, cook the ground beef over medium heat until browned. Drain excess grease if needed.
2. Sauté Veggies – Add the onion, bell peppers, and garlic to the skillet. Cook until softened, about 3-5 minutes.
3. Simmer – Stir in diced tomatoes, tomato sauce, beef broth, Italian seasoning, salt, pepper, and paprika. Bring to a simmer.
4. Add Rice – Stir in the uncooked rice, cover, and reduce heat to low. Let it cook for about 20 minutes, stirring occasionally, until the rice is tender.
5. Cheese Topping – Sprinkle shredded cheese on top. Cover and let it melt for a few minutes, or place under the broiler for a golden, bubbly finish.
