Stuffed Pepper Soup Recipe
Ingredients:
1 lb ground beef (or ground turkey)
1 small onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
3 cloves garlic, minced
1 (15 oz) can diced tomatoes
1 (15 oz) can tomato sauce
1 (14 oz) can beef broth (or chicken broth)
1 cup water (or more as needed)
1 tbsp Worcestershire sauce
1 tsp Italian seasoning
½ tsp salt (or to taste)
½ tsp black pepper
½ tsp paprika
½ cup uncooked white rice (or cooked rice added at the end)
Instructions:
1. Brown the Beef: In a large pot over medium heat, cook the ground beef until browned. Drain excess fat if needed.
2. Sauté Vegetables: Add onion, bell peppers, and garlic. Cook for 3-4 minutes until softened.
3. Add Liquids & Seasonings: Stir in diced tomatoes, tomato sauce, beef broth, water, Worcestershire sauce, Italian seasoning, salt, pepper, and paprika.
4. Simmer: Bring to a boil, then reduce heat and let it simmer for 20 minutes.
5. Cook the Rice: Stir in the uncooked rice and cook for another 10-15 minutes until the rice is tender. (Or, add cooked rice at the end if preferred.)
6. Serve & Enjoy: Taste and adjust seasoning if needed. Serve warm with crusty bread or a sprinkle of shredded cheese
