Healthy Vegetable Casserole Recipe
Ingredients:
1 large broccoli, cut into florets
1 small onion, diced
7 small cloves of garlic, minced
A handful of baby kale
1 small zucchini, diced
1 medium carrot, shredded
1/2 red bell pepper, diced
1 cup mushrooms, sliced (optional)
1/2 cup low-fat Greek yogurt (or cottage cheese)
1/4 cup grated Parmesan (or nutritional yeast for dairy-free)
2 large eggs, beaten
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/2 tsp dried oregano
1 tbsp olive oil
Instructions:
1. Preheat oven to 375°F (190°C). Grease a casserole dish with olive oil.
2. In a large skillet, heat 1 tbsp olive oil over medium heat. Add onions and garlic, sauté for 2 minutes.
3. Add broccoli, zucchini, bell pepper, and mushrooms. Cook for about 5 minutes until slightly softened.
4. Stir in baby kale and carrots, then remove from heat.
5. In a bowl, whisk together Greek yogurt, eggs, salt, pepper, paprika, and oregano.
6. Pour the mixture over the veggies and toss gently. Transfer to the casserole dish.
7. Sprinkle with Parmesan and bake for 20-25 minutes, or until golden and set.
8. Let cool slightly before serving.
