Mac and Cheese Meatloaf Casserole


Ingredients:


For the meatloaf base:


1 ½ lbs ground beef


1 egg


1 cup breadcrumbs


½ cup milk


½ small onion, finely chopped


1 tsp garlic powder


1 tsp salt


½ tsp black pepper


½ cup ketchup (plus extra for topping, optional)



For the mac and cheese:


2 cups elbow macaroni


2 tbsp butter


2 tbsp flour


2 cups milk


2 cups shredded cheddar cheese


Salt & pepper to taste



Optional topping:


½ cup shredded cheddar


Chopped parsley or green onions for garnish

Instructions:


1. Preheat oven to 375°F (190°C). Lightly grease a 9x13” baking dish.



2. Make the meatloaf base:

In a large bowl, mix together all meatloaf ingredients. Press evenly into the bottom of the baking dish. Spread extra ketchup on top if desired.



3. Bake the meatloaf base for 20–25 minutes, until mostly cooked through. Drain excess grease if needed.



4. Cook the pasta:

While the meatloaf bakes, cook macaroni until al dente. Drain and set aside.



5. Make cheese sauce:

In a saucepan, melt butter over medium heat. Stir in flour and cook 1 minute. Gradually whisk in milk. Cook until thickened, about 5 minutes. Stir in shredded cheese until melted. Season with salt and pepper.



6. Combine pasta and cheese sauce:

Mix macaroni with cheese sauce. Pour evenly over the baked meatloaf layer.



7. Top and bake again:

Sprinkle extra cheese on top if desired. Return to oven and bake uncovered for 15–20 more minutes, until bubbly and golden on top.



8. Cool slightly, then serve:

Garnish with parsley or green onions and dig in!
