Classic Meatloaf Recipe
Ingredients:
For the Meatloaf:
2 lbs ground beef (80/20 for juiciness)
1 cup breadcrumbs (or crushed crackers)
1/2 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
2 eggs, beaten
1/4 cup ketchup
1 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika (optional)
1/2 tsp dried oregano
For the Glaze:
1/2 cup ketchup
2 tbsp brown sugar
1 tbsp apple cider vinegar (or white vinegar)
Instructions:
1. Preheat Oven: Set oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
2. Mix Meatloaf Ingredients: In a large bowl, combine all the meatloaf ingredients. Mix gently with your hands or a spoon until just combined (don’t overmix, or it may become dense).
3. Shape the Loaf: Form the mixture into a loaf shape on the baking sheet, or press it into a loaf pan.
4. Prepare the Glaze: In a small bowl, mix ketchup, brown sugar, and vinegar. Spread half over the meatloaf.
5. Bake: Bake for 45 minutes, then spread the remaining glaze on top. Bake for 15 more minutes (total 1 hour).
6. Rest & Serve: Let the meatloaf rest for 10 minutes before slicing. This helps keep it juicy.
