Potato Pancakes with Savoury Beef and Cheese
Ingredients:
For the Potato Pancakes:
4 medium potatoes, peeled and grated
1 small onion, grated
2 eggs
1/4 cup flour (or more as needed)
Salt and pepper, to taste
Oil, for frying
For the Savoury Beef Filling:
1 lb ground beef
1 small onion, finely diced
2 garlic cloves, minced
1/2 tsp paprika
1/2 tsp thyme (optional)
Salt and pepper, to taste
1/2 cup beef broth or water
1 cup shredded cheddar or mozzarella cheese

Instructions:
1. Make the Filling:
In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
Add diced onion and garlic; sauté until soft.
Season with paprika, thyme, salt, and pepper.
Pour in the broth or water and let it simmer for 5-10 minutes until slightly thickened. Set aside.
2. Make the Potato Pancakes:
Grate potatoes and onion, then squeeze out as much liquid as possible using a clean towel.
In a bowl, mix the grated mixture with eggs, flour, salt, and pepper until combined.
Heat oil in a non-stick skillet over medium-high heat. Scoop about 1/4 cup of the mixture per pancake, flatten, and fry 3–4 minutes per side until golden and crispy. Drain on paper towels.
3. Assemble:
Spoon some beef mixture on top of each potato pancake and sprinkle with shredded cheese.
Optional: Place under broiler for a minute or two to melt the cheese, or serve as is with sour cream or a dollop of spicy mayo.
