Stuffed Shells
Ingredients
1 lb. ground beef
18 jumbo pasta shells
4 oz. shredded mozzarella cheese
3 oz. fresh baby spinach (chopped)
1 cup ricotta cheese
1/2 cup grated Parmesan cheese
1 egg
2 cups marinara or pasta sauce
1 tsp Italian seasoning
1/2 tsp garlic powder
Salt & pepper to taste

Instructions
1. Cook the Pasta Shells
Boil the jumbo shells in salted water until al dente. Drain and set aside to cool.
2. Prepare the Filling
In a skillet, cook the ground beef until browned. Season with salt, pepper, garlic powder, and Italian seasoning. Drain excess grease.
In a bowl, mix the ricotta, spinach, cooked ground beef, 1/4 cup Parmesan, 1/2 of the mozzarella, and the egg. Stir until well combined.
3. Stuff the Shells
Fill each cooked shell with about 2 tablespoons of the meat mixture.
4. Assemble
Spread 1 cup of marinara sauce in the bottom of a baking dish.
Place stuffed shells on top. Pour the remaining sauce over the shells.
Sprinkle with remaining mozzarella and Parmesan.
5. Bake
Cover with foil and bake at 375°F (190°C) for 25 minutes. Uncover and bake for an additional 10 minutes until cheese is melted
