Tender Oven-Baked Jerk Chicken Drums
Ingredients:
1 tbsp brown sugar
1 tsp garlic powder
1 tsp paprika
½ tsp cayenne pepper
½ tsp black pepper
Wet Seasonings:
3–4 tbsp mild jerk seasoning (store-bought or homemade)
½ cup chicken stock
Other:
6–8 chicken drumsticks (skin-on for best flavor)

Instructions:
1. Preheat Oven: Set your oven to 375°F (190°C).
2. Prep the Chicken: Pat the drumsticks dry with paper towels. Place them in a large bowl or zip-top bag.
3. Mix Dry Seasonings: In a small bowl, combine brown sugar, garlic powder, paprika, cayenne pepper, and black pepper.
4. Season Chicken: Rub the dry seasoning mix all over the drumsticks.
5. Add Wet Seasonings: Pour the jerk seasoning and chicken stock over the seasoned chicken. Toss to coat evenly. Let marinate for at least 30 minutes (or overnight in the fridge for deeper flavor).
6. Bake: Arrange the drumsticks in a single layer in a baking dish or on a foil-lined baking sheet. Pour the remaining marinade over the top.
7. Cover and Bake: Cover the dish with foil and bake for 40 minutes.
8. Uncover and Broil: Remove foil and broil on high for 5–8 minutes, until the skin is crisped and slightly charred.
9. Serve: Let rest for a few minutes. Serve with rice, plantains, or steamed veggies.
