Ingredients:
1 cup finely grated carrots (about 2 medium carrots)
1 cup all-purpose flour (plus more for dusting)
1/2 cup shredded cheese (cheddar, mozzarella, or a mix)
2 tablespoons Greek yogurt or plain yogurt
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon garlic powder (optional)
1/4 teaspoon baking powder
Fresh parsley or chives (optional, for flavor)

Instructions:
1. Prep the Dough
In a mixing bowl, combine grated carrots, shredded cheese, yogurt, olive oil, salt, garlic powder, and baking powder. Mix well.
Gradually add flour and knead into a soft dough. If the dough is sticky, add a little more flour, one tablespoon at a time.
2. Rest (Optional)
Cover the dough with a towel and let it rest for 10–15 minutes for easier rolling.
3. Shape Flatbreads
Divide dough into 4–6 equal balls. Roll each one out on a floured surface into a thin circle or oval (about 1/8 inch thick).
4. Cook
Heat a non-stick skillet or griddle over medium heat.
Cook each flatbread for 2–3 minutes per side until golden brown and slightly puffed. Press gently with a spatula while cooking.
5. Serve
Brush with a little butter or olive oil if desired. Serve warm with dips, soup, or enjoy on their own!
