🌮 Walking Taco Casserole
Ingredients:
1 lb ground beef
1 small onion, diced
1 packet taco seasoning (or 2 tbsp homemade)
1/2 cup water
1 (10 oz) can Rotel (diced tomatoes with green chilies), drained
1 (15 oz) can black beans, drained and rinsed (optional)
2 cups shredded cheddar cheese (or Mexican blend)
3 cups Fritos corn chips (or Doritos, slightly crushed)
1/2 cup sour cream
Optional toppings: shredded lettuce, diced tomatoes, jalapeños, green onions, olives, salsa, or more chips

🔥 Instructions:
1. Preheat oven to 350°F (175°C).
2. Cook the meat: In a large skillet over medium heat, cook the ground beef and onion until browned. Drain excess grease.
3. Add seasoning: Stir in taco seasoning and water. Let simmer for 2–3 minutes until thickened.
4. Add extras: Stir in Rotel and black beans (if using). Let it heat through for 2 minutes.
5. Layer in baking dish: In a greased 9x13 baking dish, layer half the chips on the bottom. Spread the beef mixture over the chips.
6. Spread sour cream gently over the meat layer.
7. Top with cheese and remaining chips.
8. Bake uncovered for 15–20 minutes or until cheese is melted and bubbly.
9. Serve warm with your favorite taco toppings!
