Ingredients:

  • πŸ₯• 1 carrot, grated
  • πŸ§… ½ onion, finely chopped
  • 🌢️ ½ red bell pepper, finely chopped
  • 🌿 1 small handful of parsley, chopped (optional)
  • πŸ§€ 1 cup shredded cheese (mozzarella, cheddar, or a blend)
  • πŸ₯š 2 eggs
  • 🌾 1 cup all-purpose flour
  • πŸ§‚ Salt & pepper to taste
  • πŸ›’️ Oil for frying

πŸ”ͺ Instructions:

  1. Prep the veggies:
    In a large mixing bowl, combine the grated carrot, chopped onion, chopped bell pepper, and parsley.

  2. Add cheese & eggs:
    Mix in the shredded cheese and eggs until well combined.

  3. Add flour & season:
    Stir in the flour, salt, and pepper. The mixture should hold together — add a tablespoon of water or more flour if needed to adjust consistency.

  4. Heat the oil:
    In a large skillet, heat about 2–3 tablespoons of oil over medium heat.

  5. Cook the fritters:
    Scoop 2–3 tablespoons of the mixture per fritter into the hot pan, flattening slightly with the back of a spoon. Fry for 2–3 minutes per side or until golden brown and crispy.

  6. Drain:
    Transfer to a paper towel-lined plate to drain excess oil.

  • Serve warm with sour cream, tzatziki, or a simple yogurt dip.
