π§ Cheesy Vegetable Fritters
✅ Ingredients:
- π₯ 1 carrot, grated
- π§ ½ onion, finely chopped
- πΆ️ ½ red bell pepper, finely chopped
- πΏ 1 small handful of parsley, chopped (optional)
- π§ 1 cup shredded cheese (mozzarella, cheddar, or a blend)
- π₯ 2 eggs
- πΎ 1 cup all-purpose flour
- π§ Salt & pepper to taste

πͺ Instructions:

Prep the veggies:
In a large mixing bowl, combine the grated carrot, chopped onion, chopped bell pepper, and parsley. -
Add cheese & eggs:
Mix in the shredded cheese and eggs until well combined. -
Add flour & season:
Stir in the flour, salt, and pepper. The mixture should hold together — add a tablespoon of water or more flour if needed to adjust consistency. -
Heat the oil:
In a large skillet, heat about 2–3 tablespoons of oil over medium heat. -
Cook the fritters:
Scoop 2–3 tablespoons of the mixture per fritter into the hot pan, flattening slightly with the back of a spoon. Fry for 2–3 minutes per side or until golden brown and crispy. -
Drain:
Transfer to a paper towel-lined plate to drain excess oil.
