Shrimp and Spinach Stuffed Pasta Rolls
Ingredients:
8 cooked lasagna noodles
1 tbsp olive oil
1/2 lb shrimp, peeled, deveined, and chopped
2 cups fresh spinach, chopped
2 cloves garlic, minced
1 cup ricotta cheese
1/2 cup shredded mozzarella
1/4 cup grated Parmesan
1 egg
Salt & pepper to taste
1 1/2 cups marinara or Alfredo sauce (your choice)
Instructions:
1. Preheat oven to 375°F (190°C).
2. In a skillet, heat olive oil over medium. Sauté garlic and shrimp until pink, about 2–3 minutes. Add spinach and cook until wilted. Let cool.
3. In a bowl, mix ricotta, mozzarella, Parmesan, egg, salt, pepper, and the cooled shrimp-spinach mixture.
4. Spread each lasagna noodle with the filling and roll tightly.
5. Pour half of the sauce into a greased baking dish. Place rolls seam-side down. Top with remaining sauce and extra cheese if desired.
6. Cover with foil and bake for 20 minutes. Uncover and bake 10 more minutes until bubbly.
Serve hot and enjoy every creamy, cheesy bite!
