Classic Scotcheroos
Ingredients:
1 cup light corn syrup
1 cup granulated sugar
1 cup creamy peanut butter
6 cups Rice Krispies cereal
1 cup semi-sweet chocolate chips
1 cup butterscotch chips
Instructions:
1. Prepare Pan
Lightly grease a 9x13-inch baking dish or line with parchment paper.
2. Make Syrup Mixture
In a medium saucepan over medium heat, stir together corn syrup and sugar.
Heat until the mixture just begins to bubble (do not let it boil too long, or bars will be too hard).
Remove from heat and stir in peanut butter until smooth.
3. Combine with Cereal
Pour the peanut butter mixture over the Rice Krispies in a large bowl.
Mix well until evenly coated.
Press mixture firmly into prepared pan.
4. Make Topping
In a microwave-safe bowl, melt chocolate chips and butterscotch chips together in 30-second intervals, stirring between each until smooth.
Pour over cereal mixture and spread evenly.
5. Set & Serve
Allow bars to cool at room temperature until topping is set (or refrigerate for faster results).
Cut into squares and enjoy!
👉 Tip: For softer bars, pull the sugar mixture off the heat right when it starts bubbling. For firmer ones, let it bubble a little longer.
