🛒 Ingredients
2 cups cooked shredded chicken (leftover or rotisserie works great)
2 large eggs
1/2 cup flour (all-purpose or self-rising)
1/4 cup grated Parmesan cheese
1/4 cup shredded mozzarella cheese (optional for extra gooeyness)
1/4 cup mayonnaise or sour cream (helps bind and keeps them moist)
2 cloves garlic, minced
2 tbsp green onions or parsley, chopped
1 tsp paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/2 tsp salt, or to taste
1/2 tsp black pepper
1/4 tsp cayenne pepper (optional for a little kick)
3–4 tbsp oil, for frying (vegetable or olive oil)

👩‍🍳 Instructions
1. Make the mixture:
In a large bowl, combine shredded chicken, eggs, flour, Parmesan, mozzarella (if using), mayonnaise, garlic, herbs, and all seasonings. Mix until a thick batter forms.

2. Heat oil:
In a large skillet, heat 3–4 tbsp oil over medium heat until shimmering.

3. Shape fritters:
Scoop about 2–3 tablespoons of the mixture and drop into the skillet. Flatten slightly with the back of a spoon to form small patties.

4. Fry until crispy:
Cook 3–4 minutes per side, until golden brown and crispy. Remove and place on a paper towel–lined plate to drain excess oil.

5. Serve:
Enjoy hot with dipping sauces like ranch, spicy mayo, honey mustard, or garlic aioli.
