🦐 Easy Creamy Seafood and Shrimp Chili
Ingredients:
1 lb shrimp, peeled & deveined (medium or large)
1/2 lb white fish (cod, haddock, or tilapia), cut into chunks
1/2 lb crab meat (optional, for extra flavor)
2 tbsp olive oil or butter
1 onion, finely chopped
1 red bell pepper, diced
2 cloves garlic, minced
1 can (15 oz) diced tomatoes with juices
1 can (15 oz) cannellini beans (or great northern beans), rinsed & drained
1 cup corn (fresh, frozen, or canned)
1 tsp smoked paprika
1 tsp chili powder (more if you like it spicy)
1/2 tsp cumin
2 cups seafood or chicken broth
1 cup heavy cream (or half-and-half for lighter version)
1/2 cup cream cheese, softened (for extra creaminess)
Salt & pepper to taste
Fresh cilantro or parsley, for garnish
Lime wedges, for serving

Instructions:
1. Sauté veggies: In a large pot, heat olive oil/butter over medium heat. Add onion, bell pepper, and garlic. Cook until softened, about 4–5 minutes.
2. Build the base: Stir in diced tomatoes, beans, corn, smoked paprika, chili powder, cumin, salt, and pepper. Pour in broth and bring to a simmer. Let it cook for 10 minutes.
3. Make it creamy: Stir in heavy cream and cream cheese until smooth. Let it simmer gently (don’t boil hard) for 5 minutes.
4. Cook seafood: Add shrimp, fish, and crab meat. Simmer just until shrimp turn pink and fish is flaky—about 5 minutes.
5. Finish & serve: Taste and adjust seasoning. Garnish with cilantro/parsley and serve with lime wedges.
