🦞 Lobster Mac n Cheese
Ingredients:
1 lb elbow macaroni (or cavatappi)
4 tbsp unsalted butter
1/4 cup all-purpose flour
4 cups whole milk, warmed
1 cup heavy cream
1 tsp Dijon mustard
1/2 tsp paprika
1/2 tsp garlic powder
Salt & black pepper, to taste
2 cups sharp cheddar cheese, shredded
1 cup Gruyère cheese, shredded (or Swiss)
1/2 cup Parmesan cheese, grated
1 1/2–2 cups cooked lobster meat, chopped (tail & claw meat)
1/2 cup Panko breadcrumbs
2 tbsp butter, melted
2 tbsp fresh parsley, chopped (for garnish)

Instructions:
1. Cook pasta: Boil macaroni in salted water until al dente. Drain and set aside.
2. Make cheese sauce:
In a large saucepan, melt butter over medium heat.
Whisk in flour to make a roux, cooking for 1–2 minutes.
Slowly whisk in warm milk and cream until smooth.
Stir in Dijon, paprika, garlic powder, salt, and pepper.
Reduce heat to low and add cheddar, Gruyère, and Parmesan. Stir until melted and creamy.
3. Combine pasta & lobster: Fold pasta and lobster meat into the cheese sauce until evenly coated.
4. Bake (optional but delicious):
Preheat oven to 375°F (190°C).
Pour mixture into a greased 9×13 baking dish.
Mix Panko with melted butter and sprinkle on top.
Bake 20–25 minutes, until golden and bubbly.
5. Garnish & serve: Sprinkle with parsley and serve hot.
