Beef Liver and Onions

 


 


Ingredients:


1 lb beef liver, sliced


2 large onions, thinly sliced


1 cup milk (for soaking)


1/2 cup all-purpose flour


Salt and pepper, to taste


1/2 tsp garlic powder (optional)


1/2 tsp smoked paprika (optional)


3 tbsp butter


2 tbsp oil



Instructions:


1️⃣ Soak the Liver: Place the sliced liver in a bowl and cover it with milk. Let it soak for 30-60 minutes to reduce bitterness. Drain and pat dry.


2️⃣ Prepare the Onions: Heat 1 tbsp butter + 1 tbsp oil in a large skillet over medium heat. Add sliced onions and cook until golden brown and soft, about 10-15 minutes. Remove and set aside.


3️⃣ Dredge the Liver: In a shallow dish, mix flour, salt, pepper, garlic powder, and paprika. Dredge each liver slice in the seasoned flour, shaking off excess.


4️⃣ Cook the Liver: Heat remaining 2 tbsp butter + 1 tbsp oil in the same skillet over medium-high heat. Add liver slices in a single layer and cook 2-3 minutes per side until browned but still slightly pink inside (overcooking makes it tough).


5️⃣ Combine & Serve: Return the onions to the skillet and toss gently with the liver. Serve warm with mashed potatoes or rice.
