nostalgic bacon-wrapped cheddar meatloaf!
Ingredients
For the Meatloaf:
1 ½ lbs ground beef
8 slices bacon
1 cup sharp cheddar cheese, shredded
½ cup bread crumbs
¼ cup ketchup
¼ cup mustard
2 tbsp Worcestershire sauce
1 tsp garlic powder
1 tsp onion powder
½ tsp salt
½ tsp black pepper
1 egg
For the Glaze (Optional but Recommended!):
¼ cup ketchup
1 tbsp brown sugar
1 tbsp apple cider vinegar
Instructions
1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or foil for easy cleanup.
2. In a large bowl, mix ground beef, shredded cheddar, bread crumbs, ketchup, mustard, Worcestershire sauce, garlic powder, onion powder, salt, pepper, and the egg. Mix until just combined (don’t overwork it!).
3. Shape the mixture into a loaf and place it on the baking sheet.
4. Wrap the meatloaf with bacon, tucking the ends underneath to keep them secure.
5. If using the glaze, mix ketchup, brown sugar, and vinegar in a small bowl. Brush half of it over the bacon-wrapped meatloaf.
6. Bake for 45-50 minutes. After 30 minutes, brush the remaining glaze over the top.
7. Increase oven temperature to 425°F and bake for another 5-10 minutes to crisp up the bacon.
8. Rest for 10 minutes before slicing. Serve and enjoy!
