Egg Salad Sandwich
Ingredients:
For the Egg Salad:
6 hard-boiled eggs, peeled and chopped
1/4 cup mayonnaise
1 tsp Dijon mustard
1 tsp lemon juice
1 tbsp chopped chives (plus more for garnish)
Salt & black pepper to taste
For the Sandwich:
4 slices of bread (white, whole wheat, or your favorite)
1 tbsp butter (optional, for toasting)
Lettuce leaves (optional, for extra crunch)
Instructions:
1. In a bowl, mash the chopped eggs slightly with a fork.
2. Add mayonnaise, Dijon mustard, lemon juice, chopped chives, salt, and black pepper. Mix well.
3. Taste and adjust seasoning if needed.
4. Spread butter on the bread slices if toasting, then lightly toast them in a pan.
5. Spread a generous amount of egg salad on a slice of bread. Add lettuce if using.
6. Top with another slice of bread and cut in half.
7. Garnish with extra chives if desired.
