Hearty Ground Beef and Vegetable Casserole
Ingredients:
1 lb ground beef
4-5 small Yukon gold potatoes, quartered
1 cup frozen mixed vegetables (green beans, corn, peas, carrots)
1 small onion, diced
2 cloves garlic, minced
1 can (14.5 oz) diced tomatoes (optional for extra flavor)
1 ½ cups beef broth
1 tsp salt
½ tsp black pepper
1 tsp smoked paprika
½ tsp garlic powder
½ tsp onion powder
1 tbsp Worcestershire sauce
1 tbsp tomato paste (for a richer sauce)
Instructions:
1. Preheat oven to 375°F (190°C).
2. Brown the beef: In a large skillet, cook the ground beef over medium heat until fully browned. Drain excess grease.
3. Sauté onions and garlic: Add diced onions and garlic to the skillet and cook for 2 minutes until fragrant.
4. Combine ingredients: Transfer the beef mixture to a greased baking dish or slow cooker. Add potatoes, mixed vegetables, beef broth, diced tomatoes (if using), Worcestershire sauce, and seasonings. Stir well.
5. Bake: Cover with foil and bake for 50-60 minutes or until the potatoes are tender. If using a slow cooker, cook on LOW for 6-8 hours or HIGH for 3-4 hours.
6. Serve: Let cool for a few minutes, then enjoy!
