Baked Cottage Cheese Eggs
Ingredients:
6 large eggs
1 cup cottage cheese (full-fat for creaminess)
½ cup shredded cheddar or Swiss cheese
¼ cup milk or heavy cream
¼ teaspoon salt
¼ teaspoon black pepper
½ teaspoon garlic powder (optional)
½ teaspoon dried chives or parsley (for garnish)
2 tablespoons butter (for greasing)
Instructions:
1. Preheat Oven: Set to 375°F (190°C). Grease a small baking dish with butter or nonstick spray.
2. Mix Ingredients: In a bowl, whisk eggs until smooth. Stir in cottage cheese, shredded cheese, milk, salt, pepper, and garlic powder (if using).
3. Bake: Pour the mixture into the greased dish. Bake uncovered for 25-30 minutes or until eggs are set and slightly golden on top.
4. Garnish & Serve: Sprinkle with dried chives or parsley. Let it rest for 5 minutes before slicing and serving.
Tips:
For extra flavor, mix in cooked bacon, sautéed onions, or diced bell peppers.
Can be baked in muffin tins for individual servings (reduce baking time to 15-20 minutes).
