Cheesy Baked Creamed Corn 🌽🧀
Ingredients:
4 cups corn kernels (fresh, frozen, or canned, drained)
2 tbsp butter
1 small onion, finely chopped
2 cloves garlic, minced
2 tbsp all-purpose flour
1 cup milk
1/2 cup heavy cream
1 1/2 cups shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/2 tsp paprika
Salt and pepper, to taste
1/2 cup breadcrumbs
2 tbsp melted butter
Chopped green onions, for garnish
Instructions:
1. Preheat the Oven:
Preheat your oven to 375°F (190°C) and grease a baking dish.
2. Sauté the Onions & Garlic:
In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, cooking for about 3 minutes until softened and fragrant.
3. Make the Cream Sauce:
Stir in the flour and cook for 1 minute to form a roux. Gradually whisk in the milk and heavy cream, stirring continuously until the sauce thickens. Season with paprika, salt, and pepper.
4. Combine Corn & Cheese:
Add the corn, 1 cup of mozzarella, and the cheddar cheese to the skillet. Stir until the cheese has melted and everything is well combined. Transfer the mixture to your greased baking dish.
5. Add the Topping:
In a small bowl, mix the breadcrumbs with the melted butter. Sprinkle the breadcrumb mixture evenly over the corn mixture, then top with the remaining mozzarella.
6. Bake:
Bake in the preheated oven for 20-25 minutes, or until the top is golden and the dish is bubbly.
7. Garnish & Serve:
Remove from the oven and garnish with freshly chopped green onions. Serve warm and enjoy!
