Creamy Potato




Crockpot Creamy Potato & Hamburger Soup recipe that's cozy, comforting, and easy to make.


Ingredients:


1 lb ground beef


1 small onion, diced


3 cloves garlic, minced


4 cups potatoes, peeled and diced


2 cups beef broth


1 can (10.5 oz) cream of mushroom soup


1 can (10.5 oz) cream of cheddar soup (or use another can of cream of mushroom)


1 ½ cups milk


1 cup shredded cheddar cheese


½ cup sour cream


1 tsp Worcestershire sauce


1 tsp dried parsley


½ tsp smoked paprika (optional)


Salt & black pepper to taste



Instructions:


1. Brown the beef: In a skillet over medium heat, cook the ground beef and diced onion until browned. Drain excess grease and add minced garlic, cooking for another minute.



2. Layer in crockpot: Add the cooked beef mixture to the crockpot, then add diced potatoes, beef broth, cream of mushroom soup, Worcestershire sauce, dried parsley, paprika, salt, and pepper. Stir to combine.



3. Cook: Cover and cook on low for 6-7 hours or high for 3-4 hours until potatoes are tender.



4. Make it creamy: Stir in the milk, shredded cheddar cheese, and sour cream. Cover and cook for another 15-20 minutes until everything is warmed through and creamy.



5. Serve: Ladle into bowls, garnish with extra cheese, bacon bits, or fresh parsley if desired.
