Slow Cooker Amish Corn Chowder
Ingredients:
6 slices bacon, chopped
1 medium onion, diced
3 cups potatoes, peeled & diced
3 cups frozen (or fresh) corn kernels
2 carrots, diced
2 celery stalks, diced
4 cups chicken broth
1 tsp salt (or to taste)
½ tsp black pepper
½ tsp thyme (optional)
2 cups whole milk (or half & half for creamier texture)
2 tbsp butter
2 tbsp flour (for thickening)
Instructions:
1. Cook bacon & onion: In a skillet, cook chopped bacon until crisp. Remove and set aside. Sauté onion in the bacon drippings until soft, then transfer both bacon and onion to the slow cooker.
2. Add veggies & broth: Stir in potatoes, corn, carrots, celery, chicken broth, salt, pepper, and thyme.
3. Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until potatoes are tender.
4. Thicken: In a small saucepan, melt butter, stir in flour, and cook for 1–2 minutes to form a roux. Slowly whisk in the milk, cooking until thick and creamy.
5. Combine: Stir this creamy mixture into the slow cooker, mixing well. Cook another 15–20 minutes on LOW until thickened.
6. Serve: Ladle into bowls and top with extra crispy bacon. Pairs perfectly with warm bread or biscuits.
