Crockpot Pepper Steak
Ingredients:
1 ½ lbs beef sirloin or flank steak, sliced into strips
2 bell peppers (red, green, or yellow), sliced
1 small onion, sliced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, undrained
3 tbsp soy sauce
1 tbsp Worcestershire sauce
1 tbsp brown sugar
1 tsp ground ginger (optional, but adds great flavor)
1 tsp black pepper
½ tsp salt
1 cup beef broth
2 tbsp cornstarch + 2 tbsp water (for thickening, optional)
Instructions:
1. Add ingredients to crockpot – Place sliced steak, bell peppers, onion, and garlic into the crockpot.
2. Make the sauce – In a bowl, mix diced tomatoes, soy sauce, Worcestershire sauce, brown sugar, ginger, black pepper, salt, and beef broth. Pour over the beef and veggies.
3. Cook – Cover and cook on low for 6-7 hours or high for 3-4 hours until the beef is tender.
4. Thicken the sauce (optional) – In the last 30 minutes, mix cornstarch and water, then stir it into the crockpot to thicken the sauce.
5. Serve – Enjoy over rice, noodles, or as is for a low-carb option!
