Potatoes & Green Beans with Sausage
Ingredients:
1 lb smoked sausage, sliced into rounds
1 ½ lbs baby potatoes (red or gold), halved
1 lb fresh or frozen green beans
1 small onion, diced
3 cloves garlic, minced
2 tbsp olive oil or butter
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp black pepper
½ tsp salt (adjust to taste)
½ tsp red pepper flakes (optional, for heat)
½ cup chicken broth (or water)
Instructions:
1. Sauté the Sausage:
Heat 1 tbsp oil in a large skillet over medium-high heat.
Add the sliced sausage and cook until browned, about 3–4 minutes per side.
Remove sausage from the skillet and set aside.
2. Cook the Potatoes & Onion:
Add the remaining oil and the diced onion to the skillet. Sauté for 2 minutes.
Add the halved potatoes, season with smoked paprika, garlic powder, onion powder, salt, and pepper. Stir well.
Pour in the chicken broth, cover, and let simmer for about 10–12 minutes, stirring occasionally, until potatoes start to soften.
3. Add Green Beans & Garlic:
Add the green beans and minced garlic to the skillet, stirring to combine.
Cover and cook for another 5–7 minutes, or until green beans are tender and potatoes are fully cooked.
4. Combine & Serve:
Return the cooked sausage to the skillet, mix everything well, and let it heat through for 2–3 minutes.
Taste and adjust seasoning if needed.
Serving Suggestions:
Serve as a one-pan meal, or pair with cornbread for a hearty dinner.
