Italian Drunken Noodles
Ingredients:
12 oz egg noodles (or pappardelle)
1 lb Italian sausage (mild or spicy), casings removed
1 tbsp olive oil
1 small onion, thinly sliced
3 cloves garlic, minced
1 bell pepper (red, yellow, or green), sliced
1 can (14.5 oz) diced tomatoes, drained
1/2 cup dry white wine
1/2 tsp red pepper flakes (adjust to taste)
1 tsp Italian seasoning
Salt & black pepper to taste
1/4 cup fresh basil, chopped
1/2 cup grated Parmesan cheese
Instructions:
1. Cook the noodles according to package instructions, then drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add Italian sausage and cook until browned, breaking it into crumbles. Remove and set aside.
3. In the same skillet, sauté onion and bell peppers until soft (about 5 minutes). Add garlic and cook for another 30 seconds.
4. Pour in white wine, scraping up any browned bits from the pan. Let it simmer for 2 minutes.
5. Stir in diced tomatoes, red pepper flakes, Italian seasoning, salt, and pepper. Let it cook for another 5 minutes.
6. Return the cooked sausage to the skillet. Add the drained noodles and toss everything together.
7. Remove from heat and stir in fresh basil and Parmesan cheese.
8. Serve immediately, garnished with extra Parmesan if desired
