Easy Lemon Butter Chicken Tenders
Ingredients:
- 1 ½ lbs chicken tenders
- 3 tbsp unsalted butter, divided
- 2 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp paprika
- Salt & black pepper, to taste
- ½ cup chicken broth
- Juice of 1 large lemon
- 1 tbsp fresh parsley, chopped
Instructions:
- Season the chicken – Sprinkle chicken tenders with garlic powder, paprika, salt, and black pepper on both sides.
- Heat oil & butter – In a large skillet over medium-high heat, add 1 tbsp butter and olive oil.
- Sear the chicken – Add chicken tenders and cook for 3-4 minutes per side, until golden brown and cooked through. Remove from skillet and set aside.
- Make the sauce – In the same skillet, add the remaining 2 tbsp butter and stir in chicken broth and lemon juice. Simmer for 2 minutes, scraping up any bits from the pan.
- Coat the chicken – Return the tenders to the skillet, spooning the sauce over them. Let them simmer for another 2 minutes.
- Garnish & serve – Sprinkle with fresh parsley and serve warm!
