delicious Mac and Cheese Stuffed Meatloaf
Ingredients
For the Meatloaf:
2 lbs ground beef (or a mix of beef and pork)
1 cup breadcrumbs
1/2 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 egg
1 tbsp Worcestershire sauce
1 tsp salt
1/2 tsp black pepper
1/2 tsp smoked paprika
1/2 tsp Italian seasoning
For the Mac and Cheese Filling:
1 1/2 cups elbow macaroni, cooked
1 1/2 cups shredded cheddar cheese
1/2 cup heavy cream (or milk)
1 tbsp butter
1/2 tsp garlic powder
Salt and pepper to taste
For the Glaze:
1/2 cup ketchup
2 tbsp brown sugar
1 tbsp mustard
Instructions
1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
2. Make the mac and cheese:
In a saucepan over medium heat, melt the butter.
Stir in heavy cream, garlic powder, salt, and pepper.
Add the cooked macaroni and shredded cheddar cheese. Stir until the cheese is melted and smooth. Set aside.
3. Prepare the meatloaf mixture:
In a large bowl, combine the ground beef, breadcrumbs, milk, onion, garlic, egg, Worcestershire sauce, and seasonings. Mix until just combined.
4. Shape the meatloaf:
Take half of the meat mixture and press it into a loaf shape on the baking sheet.
Create a well in the center, leaving the edges intact. Fill with the mac and cheese.
Cover with the remaining meat mixture, sealing the edges tightly.
5. Glaze and bake:
Mix the ketchup, brown sugar, and mustard. Spread evenly over the top of the meatloaf.
Bake for 50-60 minutes, until cooked through (internal temp of 160°F).
6. Rest & serve:
Let it rest for 10 minutes before slicing. Enjoy!
