Meatball Boats
Ingredients:
2 pounds ground beef
2 eggs
1 cup bread crumbs
½ cup grated Parmesan cheese
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon Italian seasoning
1 cup marinara sauce
1 cup shredded mozzarella cheese
4 hoagie rolls or sub rolls, hollowed out
Instructions:
1. Preheat oven to 375°F.
2. In a large bowl, mix ground beef, eggs, bread crumbs, Parmesan, garlic powder, onion powder, salt, pepper, and Italian seasoning until well combined.
3. Roll the mixture into meatballs (about 1½ inches in size).
4. Place on a baking sheet and bake for 20-25 minutes, or until cooked through.
5. While meatballs are baking, hollow out the center of the hoagie rolls.
6. Spoon marinara sauce into each roll, then add meatballs on top.
7. Sprinkle shredded mozzarella over the meatballs.
8. Place the filled rolls on a baking sheet and bake for 5-7 minutes, until the cheese is melted and bubbly.
