Meatloaf




Homemade Brown Sugar Meatloaf:


Ingredients:


½ cup brown sugar


½ cup ketchup


1½ pounds ground beef (or a mix of beef and pork)


¾ cup milk


2 eggs, beaten


1½ teaspoons salt


¼ teaspoon black pepper


1 small onion, finely chopped


¾ cup bread crumbs (or crushed crackers)



Instructions:


1. Preheat oven to 350°F (175°C). Lightly grease a loaf pan.



2. Prepare the glaze: In the bottom of the loaf pan, spread the brown sugar evenly. Then spread the ketchup over the brown sugar layer.



3. Make the meat mixture: In a large bowl, mix together the ground beef, milk, eggs, salt, pepper, chopped onion, and bread crumbs until just combined.



4. Shape & bake: Press the meat mixture into the pan over the ketchup and brown sugar. Bake for 1 hour or until fully cooked (internal temp of 160°F).



5. Rest & serve: Let the meatloaf sit for 5-10 minutes before slicing. The sweet and tangy glaze will coat the top beautifully!
