Bacon Brown Sugar Pork Tenderloin
Ingredients:
1–1.5 lb pork tenderloin (trimmed)
6–8 slices of bacon
1/4 cup brown sugar (packed)
1 tbsp Dijon mustard (or yellow mustard)
1 tsp garlic powder
1/2 tsp smoked paprika (optional)
Salt & black pepper to taste
Toothpicks or kitchen twine

Instructions:
1. Preheat oven to 375°F (190°C). Line a baking dish or sheet with foil and lightly grease.
2. Mix glaze: In a small bowl, combine brown sugar, mustard, garlic powder, paprika, salt, and pepper. Stir into a thick paste.
3. Rub the pork: Pat pork tenderloin dry with paper towels. Rub the glaze all over the pork.
4. Wrap with bacon: Lay bacon slices across the pork, tucking the ends under the meat or securing with toothpicks. You can also wrap them around spirally.
5. Bake: Place in the prepared dish and bake for 30–40 minutes, or until internal temperature reaches 145°F.
6. Broil for crispy bacon: Switch oven to broil for the last 2–4 minutes to crisp up the bacon. Watch closely!
7. Rest: Let rest for 5–10 minutes before slicing.
