Cheesy Lasagna Soup
Ingredients:
1 lb ground beef (or Italian sausage)
1 small onion, diced
3–4 garlic cloves, minced
4 cups beef broth
1 can (14.5 oz) diced tomatoes
1 can (15 oz) tomato sauce
2 tbsp tomato paste
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
Salt & pepper to taste
8–10 lasagna noodles, broken into pieces
1/2 cup ricotta cheese
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil or parsley for garnish

Instructions:
1. Brown the meat:
In a large pot or Dutch oven, cook the ground beef and diced onion over medium heat until browned. Drain excess grease.
2. Add garlic & seasonings:
Stir in garlic, Italian seasoning, red pepper flakes, salt, and pepper. Cook 1 minute.
3. Add liquids:
Pour in the beef broth, diced tomatoes (with juice), tomato sauce, and tomato paste. Stir well and bring to a boil.
4. Simmer & cook noodles:
Reduce heat to a simmer. Add broken lasagna noodles. Simmer 12–15 minutes or until noodles are tender.
5. Make it cheesy:
Stir in mozzarella and Parmesan cheese until melted and creamy. Dollop ricotta into each bowl when serving, or swirl it into the pot.
6. Serve:
Garnish with fresh basil or parsley. Enjoy with garlic bread!
